Chef Palen perfected his cooking techniques, flavors, and styles at the prestigious Culinary Institute of America in San Antonio, TX. He mastered Creole cuisine at Nottoway Plantation Resort in White Castle, LA; he learned Mexican street food from star Chef Johnny Hernandez’s at La Gloria restaurant in NAO, and was recently the Sous Chef for Celebrity chef John Folse at White Oak Plantation, helping with the creation of numerous television episodes and John Folse’s cookbook, “Can You Dig It”.
